Tucker Hill Lodge opened in 1948 in Vermont\'s Mad River Valley, and by the early 1950s its owners had strung a 600-foot rope tow behind the lodge and were hosting a winter carnival there each year; that little ski hill is now counted among the valley\'s lost ski areas. The kitchen proved the more lasting attraction. Gary Danko, later a three-time James Beard Foundation Award recipient, cooked at Tucker Hill in the 1980s and, taken with the local butter, cheeses, poultry and produce, began changing his menu nightly, an uncommon practice at the time. In 1987 George Schenk, then a cook at the lodge, built a wood-fired oven on the outdoor patio and started weekly flatbread nights that grew into American Flatbread, which moved on to Waitsfield\'s Lareau Farm and opened a barn restaurant there in 1992. The property still takes guests today as the Tucker Hill Inn.
